The grapes come from the area of Santa Ninfa at an altitude of about 400 meters above sea level. The soil, which is hilly, is primarily clayey-chalky with a good percentage of clay.

Grape Harvesting
Between the middle and end of September, when the grapes have fully matured. The grapes are harvested by hand in the coolest hours of the day.

The grapes are placed in steel tanks and macerate for about 12- 14 days at a temperature of about 20°C. After the natural malolactic fermentation, the wine is aged in French oak and American oak barriques and barrels (capacity 2500 liters) for about 12 months, after which the wine undergoes a lengthy maturation process in the bottles.

Organoleptic properties
Intense ruby red in colour, with purple hues, enraptures the nose with typical hints of black pepper, leather and liquorice which blend well with airy notes of vanilla and roast, caused by the aging process in oak barrels. It has complex and full-bodied palate.
