Organic Wine

The Chardonnay grapes come from the Salemi estate located at an altitude of about 170 meters above sea level. The terrain, which is hilly, is rich in organic substances and has a silty-clayey structure with chalk crystals which is typical of the area.

Grape Harvesting
The grapes are harvested in mid August by hand in the coolest hours of the day.

After a careful selection, they are fermented in steel tanks and undergoes a brief low-temperature skin contact before it is crushes. Fermentation lasts about 12 days at a temperature of about 15°C. After the grapes are fermented, the wine is aged in steel tanks maintained at a constant temperature. Lastly, the wines aged in bottle for few months.

Organoleptic properties
Elegant and fine, bright straw-yellow with light golden hues. It has a full-bodied, elegant scent with hints of citrus and tropical fruit. Complex and persistent, with a lively freshness yet structured at the same time. Its complex acidity enables the wine to age well in the bottle.
